Mini Sweet Peppers: Any kind you want. Our local stores only carry the 3-pepper package with a mix of colors.
Cheese: This recipe uses shredded cheddar cheese and cream cheese. You want the cream cheese to be at room temperature so it's soft enough to mix.
Seasonings: A packet of ranch seasoning is used to give the cream cheese mixture some extra flavor. Do not use ranch dressing.
Buffalo Sauce: This is what gives these spicy mini stuffed peppers their heat. You can choose your favorite brand.
Sour Cream: The sour cream adds a bit of tangy flavor to the cream cheese mixture and helps give it more of a creamier texture.
Chives for garnish: optional
How to Make Spicy Mini Stuffed Peppers

Prep the peppers: Wash the peppers and cut them in half lengthwise. Scoop out the seeds. Pat the peppers dry and then set them aside.

Spicy Mini Stuffed Peppers
Ingredients
- 8 oz cream cheese
- 16 oz sour cream
- ¼ c buffalo sauce
- 8 oz shredded cheddar cheese
- 1 ranch seasoning packet
- 4 mini sweet peppers
- chives (optional)
Instructions
- Wash the peppers and cut them in half lengthwise. Scoop out the seeds. Pat the peppers dry and then set them aside.
- Mix the sour cream, cream cheese, cheddar cheese, buffalo sauce, and ranch dressing together in a small bowl.
- Fill each of the mini peppers with the cream cheese mixture.
- Sprinkle chives on top of the peppers for garnish. (Optional)
- Serve immediately or cover and place in the fridge until ready to use.
