Slice the chicken breasts, peppers, and onion into thin strips.
In a large bowl, combine the oil, fajita seasoning, chicken. and vegetables. Toss with a fork or tongs until evenly coated.
Place the seasoned chicken and vegetables in the air fryer basket. Try to keep it in a single layer so that the veggies and chicken cook evenly.
Cook for 11 minutes. Remove the basket and shake or use tongs to mix them around.
Cook for an additional 11 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred.
Notes
Salt free fajita seasoning is what we prefer, but you can use your homemade or favorite store bought seasoning.
Swap out the peppers and onions with your favorite fajita veggies or add them into the meat mixture.
Avocado oil is great for fajitas because it has such a mild flavor and does well with heat. If you don’t have avocado oil, olive oil will work too but you may get some smoke while cooking.
You can either enjoy them as a traditional fajita or make fajita bowls without the tortillas. Either way works and it’s delicious.
