Ingredients
8spinach/arugula mix
8slices bacon
2gala apples
⅓cupgoat cheese
½cupglazed pecans
⅓cupdried cranberries
Dressing
2tablespoonsolive oil
½tablespoonDijon mustard
½cupapple juice
2tablespoonsapple cider vinegar
1tablespoonhoney
¼teaspoonsalt
¼teaspoonpepper
Instructions
Cook the bacon: You can make the bacon in the oven, microwave, air fryer, or any way you want. For this recipe we used the oven but we have used air fryer bacon.
Dice the apples and the bacon once it’s cooled off.
Make the dressing by adding all of the dressing ingredients to a bowl and mixing them together.
Assemble the salad: Place the arugula/spinach salad mix, add the apples, bacon, pecans, dried cranberries, and goat cheese.
Drizzle the salad dressing on top.
Notes
Use precooked bacon if you want to save some time. You can also use air fryer bacon.
Experiment with the flavors by adding other fruits, nuts, cheeses, veggies, or your favorite salad ingredients.
