Colorful and fun, these birthday waffle pops are sweet goodness. Waffles decorated with bright colored icing, chocolate, and sprinkles. They’re perfect for serving at birthday parties or summer gatherings.
Mix together the powdered sugar and milk in a small bowl. If it’s too thick you can add some more milk to thin it down.
Divide the glaze into two small bowls. Add pink food coloring to one of the bowls and mix.
Melt the chocolate chips in a microwave safe bowl. Microwave in 30-second intervals, stirring in between, until smooth.
Use a spoon to spread the melted chocolate onto the top portion of the waffles.
Using a spoon, drizzle the colored glaze and then do the same for the white glaze.
To make them “popsicles” stick a popsicle stick through the outer edge being careful not to have it go completely through.
If you want to decorate both sides you can. Set the birthday waffle pops on parchment paper until the glaze and chocolate dries, then flip over and spoon on some chocolate and drizzle with the white and pink glaze.
Notes
Use homemade waffles or premade waffles, your choice.
Try different waffle flavors. Chocolate waffles would give them some extra sweetness.
For the glaze, you can use any food coloring you’d like. Try out blue, green, or even purple colors.
Chocolate chips are used to make the dip. If you want to go with something besides plain chocolate, use white chocolate, dark chocolate, or butterscotch chips.
You can serve these on a sticks to make “popsicles” or without, either way works and both are delicious.
