Fiesta scrambled eggs are a hearty breakfast that takes scrambled eggs up a notch. A little spice is added to them with red chili peppers and red chili flakes.
1teaspoonred chili flakes or crushed red peppercan add more or less
1-2fresh chili pepperscan add more or less
2tablespoonsbutter
4tablespoonsfresh cilantrocan add more or less
Instructions
Start out by making the scrambled eggs. In a medium bowl, whisk together the eggs, milk, salt, pepper, cilantro, and chili flakes until well combined.
Heat the butter in a non-stick skillet over medium heat until melted.
Add the chopped chili peppers to the skillet and sauté for a few minutes until they have softened up.
Pour the egg mixture into the skillet. Let it sit for a few seconds until it begins to set around the edges.
Using a spatula, gently stir the eggs, pushing them towards the center of the skillet. Continue to stir the eggs occasionally, until they are cooked through.
Remove the eggs from the heat and serve.
Optional: Top the eggs with salsa or cheese.
Notes
For more spice and heat: add a little more red chili peppers.
For less heat or spice: cut back a little on the amount of red chili peppers you add.
