Bake the red velvet cake according to the box instructions. Follow the box instructions to make the white cake but add a few drops of green food coloring to the batter and stir before baking.
Let the cakes cool completely and then crumble each of the cakes.
In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla. Fold in whipped cream.
Layer red cake, cream mixture, green cake, and cream in mini cups.
Top with more cream, cake crumbs, or holiday sprinkles.
