Patriotic Watermelon Feta Salad
Made with fresh fruit, this patriotic watermelon feta salad has the perfect blend of sweet and zesty flavors. Serve it as a dish for the 4th of July or Memorial Day.

Ingredients

watermelon
diced

feta cheese
crumbled

tablespoons
extra virgin olive oil

red onion, thinly sliced

fresh blueberries
¼
cup
fresh mint leaves, roughly chopped
for garnish
Instructions
Cut the watermelon into small cubes.
In a bowl, combine the watermelon, blueberries, feta cheese, and onions (if you’re using).
Drizzle the olive oil over the salad.
Gently toss to combine everything together.
Chill for 10 to 15 minutes in the fridge.
Garnish with fresh mint leaves and for fun, add patriotic flag toothpicks.
Notes
Add cucumbers for extra crunch and flavor.
A squeeze of lemon juice will give it some zest.
The red onion and mint leaves are optional. They’re great in this salad because they give and extra refreshing and slightly spicy flavor.
When stirring, gently toss. If you stir too hard the watermelon pieces will fall apart and get mushy.
It’s important to let the salad chill for at least 15 minutes so that the flavors can blend together.
