Ground pork, rice, and veggies turns into a delicious sausage rice casserole dish that’s easy and filling. This family meal will be a hit at the dinner table.
1teaspoonseasoned salt(omit if using seasoned pork sausage)
Instructions
Grease a 9″ x 13″ baking dish with the oil and set aside. Preheat the oven to 400F.
Place rice, water, and Lipton Chicken Noodle soup in a pan along and bring to a boil. Reduce to a simmer and cover with a lid. Cook until water is absorbed, about 10-15 minutes.
Heat a skillet over medium-high heat and cook sausage until browned. Drain any grease and put the cooked sausage in the casserole dish.
Add the chopped onion, green pepper and celery to the skillet. Add a tad more oil to sauté if needed.
Season the veggies with oregano, pepper, and salt (if using) and cook until onions are lightly golden and translucent. Remove from heat and add it to the casserole dish.
Pour the rice and soup mixture to the casserole dish with the veggies and sausage and stir together.
Bake uncovered for 45 minutes to 1 hour until browned on top.
Notes
Lipton Chicken Soup has a lot of salt added already so you can skip the salt if you wish.
If you're using ground sausage, omit the salt.
If you want to mix it up, you can use ground beef, turkey, or chicken instead of ground pork or sausage.
Add shredded cheese to make it a cheesy rice and sausage casserole.
