Cool Whip Ice Cream Sandwiches
These Cool Whip Ice Cream Sandwiches make a fun summer treat. No cooking skills needed, these strawberry and chocolate chip ice cream sandwiches are made with only a few simple ingredients.

Graham Crackers

mini chocolate chips
Instructions
In a medium mixing bowl, combine the Cool Whip, diced strawberries, and vanilla extract.
Fold everything in until well combined.
Crack the graham crackers in half and spoon the Cool Whip mixture onto one half of the graham crackers.
Place the other half of the graham cracker on top and slightly press so that the filling goes towards the edges.
Use a butter knife or spatula to smooth the filling along the edges.
Dip each side into the mini chocolate chips. Repeat until all sandwiches are made.
Place the sandwiches onto a plate or baking dish that will fit into the freezer.
Freeze at least 4 hours before serving and enjoying.
Notes
Instead of strawberries: Use any of your favorite fruits. Experiment with flavors by trying blueberry!
Chocolate Chips: Use white chocolate chips or butterscotch chips for even more flavor. Instead of chips you can also go with sprinkles.
Graham Crackers: Try using chocolate or honey graham crackers for a fun alternative.
After they are frozen, you can wrap in plastic wrap and freeze individually for an easy grab and go treat!
