These Maple Sweet Potato Bites are a cozy, kid-friendly side dish made with roasted sweet potatoes, gooey marshmallows, crunchy pecans, and a drizzle of maple syrup. They’re quick to make, fun to eat, and perfect for holidays or weeknight dinners.
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Peel the sweet potatoes and slice each into four even rounds.
Place the sweet potato slices in a bowl. Pour over the melted butter, sprinkle with salt, and toss until everything is evenly coated.
Arrange the coated sweet potato slices on the prepared baking sheet in a single layer. Bake for 15 minutes, then flip each slice and continue baking for another 10 minutes, until tender.
Remove the sweet potatoes from the oven and switch your oven to the broil setting.
Drizzle the maple syrup evenly over the baked sweet potato slices. Cut each marshmallow in half and place one half on top of each sweet potato slice.
Broil for 2–3 minutes, watching closely, until the marshmallows are toasted and golden. Watch very closely so that you do not burn them.
Remove from the oven and gently press one pecan half on top of each toasted marshmallow.
