A healthy alternative, this tofu corn dip gets its creaminess from the tofu instead of adding in extra sour cream or cheese. It’s a healthier corn dip recipe that’s easy and delicious.
In a food processor combine ⅔ cup of the corn, the tofu, lime juice, garlic, salt, and milk. Blend until well combined.
Add the mixture to a mixing bowl along with the remaining corn, the chopped tomatoes, and basil. Gently stir to combine.
Refrigerate until ready to serve.
Notes
Use fresh or frozen corn. If you’re using fresh corn, use 2 cups. Cook in a skillet first with a little butter or olive oil, let cool, then continue with the recipe.
Serve with tortilla chips, crackers, or vegetables for dipping. It makes a great appetizer for parties.
Store in an airtight container in the refrigerator for up to 3 days.
