Ingredients & Substitutions:

Cauliflower: Florets, chopped into small pieces.

Cream Cheese helps make the casserole creamy. Cut the cream cheese into chunks so that it mixes easily.

Heavy Cream

Butter: Unsalted butter is preferred and you want it to be softened (not melted).

Seasonings: Garlic powder, dried dill, sea salt, and black pepper.

Italian Cheese Blend: You can typically find a shredded Italian cheese blend at your local grocery store. If you don’t have that option, you can easily mix your own by using your favorite Italian cheeses.

Bacon: Cook 4 strips of bacon and then crumble the bacon once it’s cooled off. If you don’t want to cook bacon, you can use bacon bits or purchase the precooked bacon that you can heat in the oven. If you want to keep it keto, make sure the bacon you choose is keto-friendly.

Fresh Chives: Chopped chives will be used as a garnish for the loaded cauliflower bake. This is optional but it really adds some color to the loaded casserole bake.

How to Make Loaded Cauliflower Casserole

  1. Preheat the oven to 400°F. You can move one of the racks to the top to help speed up the melting and browning process.
  2. Steam the cauliflower until it is tender (around 7 minutes). Drain and pat dry.
  3. In a large bowl, combine the steamed cauliflower, cream cheese, heavy cream, butter, dill, salt, pepper, and garlic powder. Toss to combine.
  4. Place the loaded cauliflower mixture into a casserole dish and top with the shredded cheese and crumbled bacon.
  5. Bake for about 8-10 minutes or until the cheese is melted and the top starts to brown.
  6. Remove from the oven, top with fresh chives, and serve.
