Sausage Rice Casserole

Ground pork, rice, and veggies turns into a delicious sausage rice casserole dish that's easy and filling. This family meal will be a hit at the dinner table.

It's also easy to make and versatile. If you don't want to use ground pork you can use ground sausage, turkey, beef, or chicken.

  • Vegetables: Onion, green pepper, and celery

Grease a 9" x 13" baking dish with the oil and set aside. Preheat the oven to 400F.

Place rice, water, and Lipton Chicken Noodle soup in a pan along and bring to a boil. Reduce to a simmer and cover with a lid. Cook until water is absorbed, about 10-15 minutes.

Heat a skillet over medium-high heat and cook sausage until browned. Drain any grease and put the cooked sausage in the casserole dish.

Add the chopped onion, green pepper and celery to the skillet. Add a tad more oil to sauté if needed.

Season the veggies with oregano and pepper and cook until onions are lightly golden and translucent. Remove from heat and add it to the casserole dish.

Pour the rice and soup mixture into the casserole dish with the veggies and meat and stir together.

Bake uncovered for 45 minutes to 1 hour until browned on top.

Substitutions, Tips & Variations

  • Lipton Chicken Soup has a lot of salt added already so you can skip the salt if you wish.
  • Ground sausage is salty already, so if you use ground sausage, skip the extra salt.
  • If you want to mix it up, you can use ground beef, turkey, or chicken instead of ground pork or sausage.
  • Add shredded cheese to make it a cheesy rice and sausage casserole.

What To Serve With Ground Sausage Casserole with Rice

Rice casseroles are great with a side of veggies and this sausage one will be to. You can pair it with a side of broccoli or your favorite vegetables.

  • ½ cup rice
  • 2 tablespoons oil
  • 2 packages Lipton Chicken Noodle
  • 5 cups water
  • 1 pound ground sausage
  • 1 onion
  • 1 green pepper
  • 1 stalk celery
  • 1 teaspoon dried oregano
  • ½ teaspoon pepper
  • 1 teaspoon seasoned salt (omit if using seasoned pork sausage)
