This salad is perfect for summer! We love enjoying it with the fresh summer strawberries. If you don’t like pistachios, you can leave them out!
I’ll be honest, I never really cared for pistachios until I was older and tried a pistachio bundt cake. It wasn’t as bad as I remembered it being! It was quite good. Now, I love experimenting with them in different dishes, especially salads.

- Spring Mix: I love the spring mix when it comes to this salad but you can use your favorite salad. Romaine is always a good one!
- Strawberries: Sliced strawberries bring so much flavor and sweetness into the mix.
- Pistachios: These will not only give the salad some extra crunch but you’ll get that pistachio flavor with every bite.
- Goat cheese: If you don’t want to use goat cheese, you can use feta cheese.
- Sunflower seeds: The seeds just give a little extra crunch and flavor.
- Avocado: Avocados are so good in salads! The flavor pairs well with the strawberries and the vinaigrette.
- Homemade Strawberry Vinaigrette: Olive oil, strawberries, balsamic vinegar, and honey.
How To Make This Strawberry Spring Mix Salad with Goat Cheese
- Slice the strawberries and dice the avocado.
- In a bowl, add the spring mix, strawberries, pistachios, sunflower seeds, diced avocado, and goat cheese.
- To make the dressing, all add ingredients into the blender or food processor. Mix on high until smooth. (If needed add 2 Tbsp of water to help the ingredients blend).
- Pour dressing through a sieve to remove any seeds.
- Drizzle the dressing over the salad and toss. You can also serve the dressing on the side.

- We like to slice our strawberries in chunks. You can dice them instead if you want smaller strawberry pieces.
